May Matters- Day 15- All in one orange cake

Another May Morsel. This time it's an all in one orange cake- if you have a mixer or a blender then , everything kinda gets thrown in the mix- So easy!

You need

1 whole orange
3 eggs
180 g  butter (6.3 oz)
1 cup white sugar /8 oz/ 225 g
1½ cups (12 oz / 340 g) self raising flour OR 1½ plain  (all purpose) flour with 1½ teaspoons baking powder sifted in.
 
Preheat oven to 180/350. I used a round cake tin, but a bundt tin, or a loaf tin would work too!
 

Once you gather all your ingredients together, cut up your orange- skin, pith and all.. and throw it in the food processor/ blender/mixer!
 
 
Add sugar, butter and eggs. I used cut up butter but many recipes say you can use melted butter- but I was short on time to melt it!
 
 
Give it a mix.
 
Add your flour
 
and 'voila'- Done.
 
 
Bake it for about 35-40 mins,
 
 
 
When it was cool, I added an orange flavoured (Rind and a bit of juice) butter icing on top.

  4. Yum, that does look good. I've made Nigella's clementine cake where you have to cook the clementines until they're soft but this looks even simpler. And I always like a good thick layer of icing! x
