Oatmeal and Raisin Cookies

I run an after school club called Make, Bake and Take. Trying to find recipes that 16 kids can make, in an hour, has been quite a challenge. But we have had fun trying! Usually they end up going home with things half finished, or not quite set, or half baked- but it's all a good experience - and they love it! As far as they are concerned, the messier the better- you should see the state of my classroom when they have finished -I have to grovel to the cleaning staff every week :)
This week we made Coconut ice- delicious and sweet- but very messy- you can just imagine how far desiccated coconut can go when 16 kids have their hands on it... but that leads me on to this challenge. I had an awful lot of condensed milk to use up (once we'd made coconut ice and peppermint creams) and so I was looking for recipes that had some in. I came across the 'Carnation Milk' website here and found these very easy cookies on there.
Once I'd made them, I took them into school for the staff to share- They went down very well at coffee time- Hope you enjoy them too!

 

Oatmeal and Raisin Cookies



  • 225g butter, softened
  • 225g caster sugar
  • 170g Condensed milk
  • 200g oats
  • 150g self raising flour
  • ½ tsp cinnamon
  • 150g raisins

  •  
    1.Cream together butter and sugar
    2. Add condensed milk and mix well
    3. Add oats, cinnamon and flour
    4. Finally add the raisins (Apparently these are also really good made with sultanas too, or even coconut and cherries)
    5. Place mixture on baking tray and cook at 180 degrees for 15 minutes.

    And enjoy!- We all did:)

    1. They look great bet they taste great also. Have you tried Anzac biscuits they are quick and easy there is a recipe on my blog.

      1. Oh, we used to make Anzac Biscuits years ago.I'd forgotten about those. My recipe was from the Be Ro flour recipe book- I shall pop over to have a look at yours and give them a try:)

    2. They look great! I would never have thought of adding condensed milk to a cookie!! Makes sense though when you think about it. Glad that your colleagues enjoyed your treat. xx

    6. Yum they sound good! Good old condensed milk - funny though, it seems so English that I'm surprised you have it over there. We like the caramel version - mmmm. x

    7. They love it over here- as they mostly use it to make tea and coffee with it- It's a slightly runnier version that they use normally- but it is in everything!!! The regular condensed milk is here as well- just not so much as the thinner stuff. They have a tendency to put it with Kaya (Coconut / egg. sugar mixture) on toast. I would love to try the caramel version- instant caramel mmmm
